Dried Farro Pasta. "This is dried farro pasta, shot for The SPQR Cookbook. I loved how the pasta mimicked the tentacles of a squid. I find real beauty in the simple, the unfinished and the imperfect. As a final dish, the pasta was combined with speck, green onions and poppy seeds. Matthew Accarrino is an amazing talent and the executive chef at SPQR."
