Chicken Liver. "Probably one of the top five most delicious things I've ever eaten, this dish is chopped chicken livers with wine gelatina, carrot marmalata and grilled bread. The light, subtle sweetness of the carrot pairs brilliantly with the heavier pate. This was one of the many plated dishes photographed for The SPQR Cookbook, and after we called the last shot, my crew immediately attacked and devoured every last bite. I usually eat everything I shoot, since I want to know where it comes from, how it's prepped, and finally, how it tastes. I want to get to know each of the dishes.
